Recipe Highlight: Whipped Ricotta Bruschetta
Serves: 6 to 8

Ingredients:
- 1 loaf ciabatta bread, split down the middle and sliced into 1/2-inch pieces
- 1/4 cup|50 grams olive oil
- Kosher salt, to taste
- 1 pound|454 grams whole milk ricotta cheese
- Hot honey, to taste
- Crushed pink peppercorns, to taste
- Finishing salt, to taste
Directions:
- Preheat the oven to 400°F. Arrange the bread slices on a parchment-lined sheet tray, drizzle with olive oil, and sprinkle with a pinch of salt. Toast in the oven for 5 to 10 minutes, until golden and crispy.
- In a food processor, combine the ricotta cheese and a pinch of salt. Pulse for about 30 seconds, or until the mixture is smooth and creamy. Transfer the whipped ricotta to a pastry bag.
- Snip the tip off the pastry bag and pipe the ricotta onto each piece of toasted bread. Finish each piece with a drizzle of hot honey, a sprinkle of crushed pink peppercorns, and a touch of finishing salt.
Note: If you don’t have a pastry bag, a large Ziploc bag with a corner cut-off works just as well. Alternatively, for a rustic touch, you can spoon the whipped ricotta onto the toasts.
